Pumpkin soup looks great, but my question is about the bean salad that I made and enjoyed. Why should we use olive oil that is not extra virgin. Is it just the flavor. I also only used 1 cup as I was afraid of 2 cups. Wondered why 2 cups.
hey marge! thank you for your visit to foodielady.com! i also think extra virgin olive oil has better flavor and is better if you are going to use only one cup. this recipe is just a guideline for you to make the changes and adaptations according to the ingredients you have at hand and your personal tastes. the day I made the recipe to document for the blog I had olive oil instead of extra virgin olive oil in my pantry so i used more and it tasted pretty good, but most of the time i have evoo. this is a salad that keeps well in the fridge for a long time and it is absolutely delicious and fulfilling as you might attest. thank you for your comments for the benefit of other readers. aleida
